I have a treat for you today! I mentioned in my post a few days ago about a great pasta salad recipe.
My husband has been craving pasta salad lately, so I decided it was time to finally give this a shot!
He loves a pasta salad at our local grocery store, so I decided I would try to mimic it a bit. The problem is he didn’t want cheese in it, and I was afraid how it would turn out without it.
I went to the store and picked up some “go to pasta salad” recipe ingredients. I honestly really didn’t know what I was doing but I figured it is hard to mess up pasta salad so even if it wasn’t perfect it would be a step up from the pasta with italian dressing I used to make. Yes I used to to call that “pasta salad”.
I purchased a few necessary ingredients I felt like needed to be in there:
-Sun-Dried Tomatos
-Red Wine Vinegar
-Tomato
-Parsley
-Olives
The prep in itself is very simple.
Take all the “dressing” ingredients, put into a food processor, and blend.
The only change I would make is to increase the amount of sun-dried tomatoes I used. I only used probably 1/4 of a cup. I would up this to maybe 1/2 cup just to add a bit more flavor.
You can throw in different vegetables if you or your family likes something particular. I am not an olive fan but my husband loves them so I put them in. They are very easy to pick around.
The final product turned out delicious. You will have to excuse the picture – I forgot to take it after it was cooked and instead had to take it a day or so later.

Looks delicious! I have a small obsession with sundried tomatoes. My husband’s favorite easy pasta that I make (can be hot or cold!) is just small chunks of prosciutto or salami, halved cherry tomatoes, tortellini, and pesto. It’s deceptively yummy and I get compliments all the time despite the 5 minutes it takes to make it 😉
This was the first time I have ever cooked with sun dried tomatoes! They were delicious! That pasta sounds delicious!

I like traditional macaroni salad with mayo….our deli around the corner makes a delicious one! Everything in moderation, right? lol
I have never been a fan of mayo based salads – I can eat Chicken and Tuna salad but not a fan of macaroni salad or potato salad. You can bet I get a lot of weird looks being from the south and not liking potato salad 🙂
