Two posts in one day!? Yep. I am trying to get back in to my routine here.
We have a staple salad recipe in our household that I thought I would share with you all today. It is quick, easy, and really simple. It is also customizable and has so many options!
When I say we I mean pretty much everyone in my entire family. My mom first started making this a couple years ago, and ever since I think every family has taken it and put their own twist on it. It’s just that delicious!
You may even remember it made an appearance at our Thanksgiving table.
The recipe starts with two simple ingredients.
Romaine and broccoli slaw. You can buy the bagged romaine or the hearts which is what I prefer. It always seems to taste a bit fresher to me, but I could be crazy.
You simply combine each. I tend to decrease the amount of broccoli slaw in mine and add a little more romaine, but to each their own.
The toppings are by far the best part. There are so many options. I usually keep it simple and add the roasted Ramon noodles, almonds, and sunflower seed topping along with dried cranberries.
We have also used:
-Pears
-Apples
-Mandarin Oranges
-Chicken
-Salmon
The dressing and salad themselves are very light and go along with just about any combination!
I highly suggest you try this if you are looking for a healthy side for your dinner table. It is also great to bring to a dinner party and has been used many times in my house.

The more stuff we can put in the better! We had leftover radishes, cilantro, cabbage and so on that we’ve been integrating into our normal daily salads, and it really helps spice stuff up!
Red cabbage was a recent discovery – being of Polish and Irish descent I had loads of boiled cabbage dishes as a kid, and they were all … well, awful. I never really developed a taste for it, but then I made a sautéed red cabbage side dish over the holidays … big hit with everyone! 🙂
That is the key – experiment! Salads are a great place to play – I had one for lunch last week that was tomato, carrot, celery, leftover fresh salsa and a variety of nuts. Loved it!
Yes I love throwing things together in a salad! It is always so delicious! I have so much left over and I will eat it all throughout the week.
