I thought I would continue my recipes involving the Bob’s Red Mill products I received.
Xanthan Gum is a common thickener which I have seen all over the blog world especially being used in smoothies. I always have trouble with my smoothies turning into more of a juice than a smoothie so I thought this would be a great additive to try out!
This morning I gathered up all the smoothie ingredients I had in my house, since another trip to the grocery store wasn’t an option.
Note: I will be doing a full review soon on the Plant Fusion protein powder.
I threw all my ingredients into a blender and prayed it would turn out delicious and not odd tasting. Verdict: Delicious!
I was only making the smoothie to serve 1 so in this recipe I used about 1/2 teaspoon of Xanthan Gum.
I call this my Chocolate Strawberry Banana Spinach Smoothie.
The smoothie didn’t turn out quite as green as some in the past, I think I could have added more spinach to it. Either way the flavor was delicious!

I actually blended up the smoothie first and then added the Xanthan Gum. The smoothie definitely thickened out and I ended up enjoying it with a spoon. This will be a regular staple in my smoothies from now on.

I also make a mean chocolate covered “Shake”! I usually use ice, cottage cheese, protein powder, strawberries, some cocoa powder and stevia, to sweeten it up a bit. I never even thought about adding spinach to make it green! I might have to get (or hopefully WIN) some xanthan gum from Bob’s Red Mill. I’ve used their other products, which I love!
