The first of my products that I experimented with was the quinoa. It was the easiest to make part of a dinner out of it and I thought it would be something different to try.
I knew that I wanted to make some sort of Quinoa salad so I started browsing pinterest for ideas.
I came across a recipe I wanted to try, but decided to make a few changes of my own.
It seemed like an easy and perfect recipe to have for dinner so I went out and bought the ingredients to make it.
I did edit a few things in the recipe, but it turned out wonderfully!
Here is the recipe I created adapted from this Mexican Quinoa recipe.
Ingredients
1 tablespoon olive oil
2 cloves garlic
1 1/4 cup vegetable broth
1 cup uncooked Quinoa
1 can diced tomatoes with green chilies
1 can black beans, drained and rinsed
1 1/2 cups frozen corn
1/2 teaspoon salt
Directions
1. In large saucepan, heat olive oil to medium-high heat
2. Add garlic and saute until fragrant
3. Add remaining ingredients and bring to a boil
4. Reduce heat to low and simmer for 20 minutes
Oh, and you will have plenty of leftovers if you aren’t feeding a large family.

Great recipe – I have made something similar.
Here is a suggestion – get ‘fire roasted’ diced tomatoes. They have normal and ‘salsa style’ (and even hotter), and I have used both. My wife can’t handle too much spice, so I used ~2tbsp of the salsa style with a can or the regular fire roasted and it was a great balance of flavor and spice.
My family is iffy on quinoa – I love it, but everyone else could take it or leave it.

I love quinoa and so does the husband – I love the taste, but I have heard that you either love it or you don’t.

Black beans are Latin, not Mexican. My wife is Mexican and it makes her very angry that Americans can’t be bothered to get such things right. Pinto, not black beans, are the Mexican staple. Black beans are found in South American, Puerto Rican, and Cuban food. Looks good, but it’s not Mexican.
